Santoku
The Santoku is an all purpose knife with a round tip. The blade is shorter and thinner, making it perfect for home cooking. Santoku literally means “three virtues”, and can be used for meat, fish, and vegetables. Misono Molybdenum Santoku Japanese Knife 180mm
Molybdenum steel has a Rockwell rating of 58/59 HRC. It's hardness means it can hold a sharp edge, but not as sharp as some sharper and more expensive stainless steels, like VG10. This said the edge is very easy to maintain.
