The Kai Shun Tim Mälzer knives feature KAI's famous Damascus layered metal structure, combined with a very hard core of VG-MAX steel. The blade is hand hammered Japanese style. This technique is called Tshuchime. This not only ensures high sharpness and a beautiful appearance, but it also ensures that the product that you are cutting doesn't stick to the blade. The core of the blade features 32 layers rustproof Damascus steel on the outside. The hardness of these blades is 61 ± 1 HRC, which is exceptionally hard. This retains the knife sharpness very long. The handle is made of brown walnut and sits very nicely in your hand, both left and right handed. A beautiful detail is the logo of Tim Mälzer on the end of the handle. All in all, a gorgeous, functional knife to love.
