The Kai Shun Tim Mälzer knives feature KAI's famous Damascus layered metal structure, combined with a very hard core of VG-MAX steel. The blade is hand hammered Japanese style. This technique is called Tshuchime. This not only ensures high sharpness and a beautiful appearance, but it also ensures that the product that you are cutting doesn't stick to the blade. The core of the blade features 32 layers rustproof Damascus steel on the outside. The hardness of these blades is 61 ± 1 HRC, which is exceptionally hard. This retains the knife sharpness very long. The handle is made of brown walnut and sits very nicely in your hand, both left and right handed. A beautiful detail is the logo of Tim Mälzer on the end of the handle. All in all, a gorgeous, functional knife to love.

Made in the UK by a local craftsmen the roll is sure to turn heads and be the envy of your kitchen. The soft touch leather is stunning; flexible enough to roll and thick enough to protect your knives. Made from a high grade cow hide and brass fastenings, finished with a simple leather strap, the roll is the perfect compact size to shove in a backpack or satchel.

Kanetsugu have been creating samurai swords for more than 170 years. This “Hamaguri” shaped blade, originating from the Samurai sword, that let you cut effortlessly in a straight line. The detailed hammer-forged patterns on the blade reflect traditional bladesmithing techniques.
The core of the blade is made out of high quality stainless steel called VG2 which is clad between the layers of SUS410, a stainless steel with low hardening characteristic helps to prevent the cracking of the metal. Use it every few weeks to gently realign your edge and maintain a sharp blade.
Ceramic honing rods are a much harder material than a traditional steel and have a much finer grit which obtains faster and better results.

A little secret - Restauarant Chefs don't generally sharpen their own knives. They 'HONE' their knives daily but usually once a month they will call in a quality knife sharpener.
Chefslocker does not sell Japanese Whetsones. This is a specialised area and you can do more harm than good if you don't know what your doing.

Our Black Ceramic ceramic honing rod is perfect for maintaining the edge of your Japanese knife. With a grit equivalent to a 1000 grit whetstone, it will repair the blade without wearing it away. For this reason we would not recommend a diamond steel.
Easy to use and protected by a 3-part shock absorber, the honing rod is seriously hard, with a HRC of 60-63 it is hard wearing and long lasting.
Notice the difference. Periodically 5-10 gentle swipes at a 10-15 degree angle on each side of the edge will ensure a razor sharp finish time after time...
